my whole family is pescatarian. my sister convinced us and then my dad had to because he became allergic to everything meat-wise. ( he is also pre-diabetic) so now we have a whole family that’s pescatarian. ( despite chicken, because that’s the only thing that my dad CAN eat meat-wise. so we have that often.

what you should do is just try to eat veggies for breakfast and lunch, then for dinner maybe just try to pick around the meat and eat the veggies on your plate ( if any)
